And the 'makrashah' from the food of the desert is that meat is taken and minced into small pieces, and cut fat is placed in it, then a piece of stomach from a camel's stomach is hollowed out, and its inner side, which is free of dung, is washed and cleaned, and the minced meat and fat are placed in it, and its edges are gathered, and it is fastened with skewers after its edges are sealed, and a pit is dug for it, into which embers are placed and ignited until they become hot and turn into fire, then the embers are removed from it, and the 'makrashah' is buried in it, and a hot layer is placed over it, then it is ignited from above with large logs, then left until it is cooked, and it comes out having condensed and become a single piece to be eaten deliciously.
يقال: كرشوا لنا تكريشا
It is said: 'They cooked for us a 'takreeshan'.
والكرشاء: القدم التي كثر لحمها واستوى أخمصها وقصرت أصابعها
And the 'karshaa'': the foot whose flesh is abundant, its sole is even, and its toes are short.
والكرش: من نبات الرياض والقيعان من أنجع المراتع للمال تسمن عليه الإبل والخيل، ينبت في الشتاء ويهيج في الصيف
And the 'krsh': is from the plants of meadows and plains, one of the most effective pastures for livestock, on which camels and horses fatten; it grows in winter and flourishes in summer.
