As for its plural, it is because each type of these existing things may be called an 'alam (world/universe).
وقد روي أن الله تعالى بضعة عشر ألف عالم
And it has been narrated that God Almighty has eighteen thousand worlds.

His knowledge encompasses all things: their inner and outer, their minute and their great, to the utmost possibility.
وقد يطلق العلم ويراد به العمل
And knowledge may be used to mean action.
العالم: الذي يعمل بما يعلم
The knower: one who acts upon what he knows.
وعلم وفقه أي: تعلم وتفقه
And he learned and became a jurist, meaning he learned and gained understanding.
والمعلم، كمعظم: الملهم للصواب وللخير
And al-mu'allim, like mu'azzam: the one inspired to do right and good.

And al-'allam: like zunnar, the pulp of unripe nabq fruit.
والعيلم: البئر الواسعة، وربما سب الرجل فقيل: يا ابن العيلم!
And al-'aylam: the wide well, and sometimes a man is insulted and told: O son of the wide well!
وأعلم وعبد الأعلم: اسمان
And A'lam and 'Abd al-A'lam: two names.
وقولهم: علماء بنو فلان، يريدون: على الماء، حذفت اللام تخفيفا
And their saying: the people of so-and-so are 'ulama', they mean: near the water, the 'lam' is omitted for brevity.
وبنو عليم أيضا: بطن في باهلة
And Banu 'Alim are also: a clan among Bahila.
