ثم قال: الكريص: الذخيرة، نقله الصاغاني
Then he said: Al-kurays: the ذخيرة (reserve/store), Al-Sagani narrated this.
والصحيح أنه اسم لما يدخر ويرفع من الأقط بعد أن يجعل فيه شيء من بقل، لئلا يفسد، كما يشهد له مفهوم المادة
And the correct view is that it is a name for what is stored and kept of cheese after some herb is added to it, so it does not spoil, as the meaning of the root suggests.
قيل الكريص: هو أن يطبخ الحماض باللبن فيجفف فيرفع ويدخر فيؤكل في القيظ

ويقرب منه قول من قال: الكريص: بقلة يحمض بها الأقط

الكريص: الجوز بالسمن يكرص، أي يدق
